Bacon wrapped dates stuffed with gorgonzola

A sweet, savory and cozy appetizer that pairs with a hearty V. Sattui red wine.

INGREDIENTS

Medjool Dates (Pitted if Available) — 1 lb | approx 2-25
Thinly Sliced Bacon —  1 lb
Gorgonzola Cheese — 4 oz | 1/2 cup
Whole Toasted Almonds — 22-25 each
Toothpicks — 22-25 each

PREPARATION

Preheat the oven to 350 degrees Fahrenheit.

Slice the dates lengthwise on one side to create an opening.

Remove the pit.

Stuff each date with 1 almond.

Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.

Wrap each date with half a piece of bacon and secure with a toothpick.

Place onto fine grated baking rack that is set on a sheet tray lined with foil.

Bake for 8 minutes. Turn the dates over so the bacon will cook evenly. Continue cooking 8 min until bacon is browned and crispy.  

Serve warm or at room temperature
