Every Saturday and Sunday from 10:30 AM – 4:30 PM, our Mercato cheese counter transforms into a rotating stage for themed samplings that explore regions, milk types, aging styles, and classic (and unexpected) wine pairings. Olympic flights. Burgundian benchmarks. Italian affinage. Bries with bubbles. And whatever delicious direction our team dreams up next.
Selections change frequently and may include rare, small-production, or seasonal cheeses that make only a brief appearance in our nearly 300-cheese collection. Some wheels visit once and never return. That’s part of the thrill.
This is not a formal seated tasting. It’s casual, interactive, and happening right at the cheese counter. But make no mistake: the craft is taken seriously. Led by resident cheesemonger James Ayers, who truly eats, sleeps, and breathes cheese, our team dives into provenance, milk chemistry, rind development, aging environments, and the alchemy that happens when wine meets curd.
