Extra Virgin Olive Oil — 1/4 cup
Baguette — 1/2
Fig Spread or Preserves — 2 tbsp
Roquefort Blue Cheese — 1/2 lb
Fresh Basil, Torn for Garnish — as needed
Preheat oven to 425 degrees.
Slice baguette on the bias and place slices onto an ungreased baking pan.
Drizzle olive oil equally over the baguette slices. Place baking pan in oven and toast until bread is crisp and golden; about 5-8 minutes.
Remove baguette slices from the oven. Spread with fig spread/preserves, then top with chunks of blue cheese.
Return the croustades to the oven until the blue cheese is melted and bubbly.
Garnish with freshly torn basil and lightly drizzle again with extra virgin olive oil.
