Celebrate Mustard Season at V. Sattui Winery! Cozy up by our crackling fire with a flight of five 90+ Point wines paired with succulent sous vide Heritage Berkshire pork chop topped with house-made mostarda and served with creamy polenta and dressed arugula.  This is a guided, seated tasting hosted in our intimate Vittorio Tower Tasting Room.  We are thrilled to be working with Napa Pasture Protein, which is providing holistically raised, free-range pork for this dish.

Kurobuta (aka Berkshire) Pork is a heritage breed prized for its luxurious marbling, making it much more flavorful, tender, and moist compared to conventional pork.  We took this heritage breed prized for the above and decided to feed them in the traditional Iberico manner.  The pigs graze on pastures filled with Oak acorns and native grasses until they are ready to harvest.  The sweet, nutty, flavor is melt-in-your mouth delicious. This takes a bit longer than commercial hog farming, but we think the wait is definitely worth it. 

Napa Pasture Protein was formed by Cori Carlson, a Napa Native, to push the boundaries of sustainable farming in our Valley.  All of the animals (sheep, goats, pigs, cattle, chickens) are grazed on pasture lands for their health and well-being, and that of our community.  The grazing helps keep fire fuels down and prevent the devastating consequences of large-scale wildfires.  The farm was saved twice in 2017 and 2020 due to the pasture lands that had been maintained by our animals. We expanded our grazing operations to help others in the Valley, grazing the hills and vineyards from Calistoga to Sonoma.  This synergistic partnership between humans, land, and animals, is what we hope drives the sustainable mantra into the next generation.
