The CR is pumped over daily to extract color and richness and is then finally pressed off, cold-settled and fermented before being tirage-bottled in the traditional methodé champenoise and aged for over 24 months on the yeast. It has a slightly sweet dosage (2.6% residual sugar) but a classic dry finish that will make any occasion an effervescent one.
