The CR is pumped over daily to extract color and richness and is then finally pressed off, cold-settled and fermented before being tirage-bottled in the traditional methodé champenoise and aged for over 24 months on the yeast. It has a slightly sweet dosage (2.6% residual sugar) but a classic dry finish that will make any occasion an effervescent one.

Think sparkling Gamay Rouge... But better. Very drinkable. Effervescence is outstanding. As it warms slightly it opens somewhat but finish is never long. Medium body without excessive dryness. Great balance. An everyday luxury. Buy with confidence.
