Vittorio’s Vineyard, about thirty acres adjacent to the winery on the south side, is planted about half to Cabernet Sauvignon. The soils are gravelly loam and marginally fertile, which stresses the vines and produces excellent quality grapes. The vineyard enjoys a microclimate that is perfectly suited to Cabernet and the four other varieties (Merlot, Petit Verdot, Syrah & Zinfandel) planted there. Vines are spaced 2 x 4 which causes the root balls to compete with one another and they are trained to a vertical curtain. The vines are stressed to the point where we take a European farming approach, with our workers making three passes through the vineyard towards the latter part of the season to drop (or thin) clusters so that the vines can fully ripen their load.
