A true cuvée of free run and lightly pressed juice creates a wine of delicate texture, with delicious aromatics of Chardonnay’s classic citrus and apple balanced with Pinot’s floral and light strawberry fruit notes. Tirage-bottled (sugar and yeast added to cause a second fermentation in the bottle and then aged on the yeast), this is “our best sparkling wine to date,” says Director of Winemaking Brooks Painter.
