So many times I have served this to people who tell me that they do not like Chardonnays and with one taste, their eyes rolled with disbelief. So many Chardonnays are like soma wrestlers that overwhelm anything on a plate until you reach lamb. I call this wine my ballerina. She’s poised, balanced, delicate and graceful. We were tempted to sell the bottle with a tutu.
Fermented in stainless steel and aged in seasoned (older) oak, a beautiful balance is achieved with nice fruit reminiscent of Granny Smith apples; just a trace of butteriness and oak held well in check. The aromatics and flavors of this wine are not in competition with one another as is the case with so many California Chardonnays.
This is a Chardonnay one could actually serve with seafood – sole, halibut, scallops, cod - or have it as a refreshing summertime aperitif.
