Many red wines- -and a few white wines from the best growing areas such as the Napa Valley- -often do two things when they are aged long-term in the bottle: They improve in quality. And they appreciate in value. You don't necessarily need state-of-the-art equipment to help your wines mature gracefully…. Keep them in a cool, dark place, away from the kitchen, and low against an interior wall. The ideal cellar temperature is 50-55 degrees, but the important factor is consistent temperature, without huge fluctuations.
Why pay high prices for mature wines? Choose wines that are still good values and show promise for improving in the future. Remember to use the chart below as a guide only, as the conditions under which you store your wine and your own palate should be the final determinants as to when your wines will be at optimum maturity.
